First of all, I give thanks to God for allowing me to present myself and this project, and for opening the doors of the coffee shops and spaces that have trusted me along the way.

 

My name is Jhenyfer. I was born in Colombia, raised in Spain, and have been living in London for the past ten years — a city that has inspired me in countless ways.

 

My journey with sushi began eight years ago while working as a delivery driver for Sushi Shop. Watching the chefs carefully craft each roll by hand left a lasting impression on me, and from that moment, I knew I wanted to learn this craft.

 

Since then, I’ve worked in some of London’s most well-known sushi restaurants, including Sticks’n’Sushi, Sushi Samba, You Me Sushi, and others. Each experience helped me grow, refine my skills, and keep dreaming.

 

After the pandemic, I took a leap of faith and launched my first project — a vegan sushi brand. Today, I return with a new vision: PRO SUSHI — a concept that brings together high-protein ingredients, fresh flavours, and the elegance of artisan sushi.

 

As a single mother, my greatest motivation is my son. Every roll I make carries dedication, care, and the dream of building a better future — for him, and for everyone who believes in honest, nourishing food.

 

At PRO SUSHI, we put our heart into every detail, so that with every bite, our customers can experience a moment of balance, joy, and connection.
